BEST FIVE-CHEESE VEGAN MAC N' CHEESE

Thanksgiving Holiday time is finally here! This is a festive and heartwarming time to celebrate with family and friends and to be thankful for all the blessings we have in life. In addition to spending time with family and being grateful, the next best thing about Thanksgiving is the FEAST! And we all know you can’t have a Thanksgiving feast without MAC N’ CHEESE! In honor of this, I will share with you my Vegan, 5-Cheese, Mac N’ Cheese recipe. I’ve prepared this for Thanksgiving dinner for my family and friends for the past 5 years, with rave reviews. My Mac N’ Cheese rendition consists of macaroni pasta mixed with a cheesy DAIRY-FREE mix that is RICH and CREAMY! It’s so delicious that no one knew the cheese was vegan until I told them! This recipe is very simple and has only 5 steps! Here is my Vegan Mac N’ Cheese recipe: dairy-free, vegan, and even milk lovers will ENJOY!

Step 1: Preheat the oven to 400°F. Lightly spray a 9x13-inch baking dish with non-stick olive oil cooking spray. Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 6 to 8 minutes. Drain and set aside.

Step 2: In a large bowl, toss together the dairy-free mozzarella cheese, dairy-free parmesan cheese, and dairy-free provolone cheese. Remove about 1/2 cup for topping and set aside.

Step 3: In a separate bowl, mix together the dairy-free ricotta cheese, dairy-free sour cream, and dairy-free heavy whipping cream. Season with parsley, Italian seasoning, and garlic powder.

Step 4: Pour the dairy-free ricotta cheese mixture and drained macaroni into the large bowl with the dry cheese and lightly toss. Do not mix too much (it is better left a bit messy). Pour into the prepared baking dish. Sprinkle the reserved cheese over the top.

Step 5: Bake in the preheated oven for about 20 minutes (until cheese is melted), then turn the oven to broil. Broil for about 5 minutes for a golden-brown top. ENJOY!
